Taken from the leg, the shank is naturally lean and packed with rich connective tissue that melts down during long cooking—creating a tender, silky texture and incredibly savory broth. As always, our cattle are 100% grass-fed, pasture-raised, and free of antibiotics and hormones, offering you clean, nutrient-dense beef straight from our farm.
